First of all, Happy Easter! Every Sunday is a great day, but this one is always a tad more special. I hope your weekend has treated you well thus far. Let’s get into the nitty gritty, shall we?
THE BEAT:
No words necessary. This jam will have you grooving in no time. It’s smooth, meaningful, and perfect for Easter Sunday.
THE EAT:
I was thinking to myself the other day, what if plans fall through on Easter and I need something quick to cook up and bring over to my parents? Would love a dish with protein, and something I can sauce up however I wish. Spicy, sweet, or a combination of both. I needed options, and by golly, a light bulb shone in my empty attic of a head:
Meatballs…. Easter Meatballs.
Why should the kids have all the fun? If they get eggs, adults get meatballs. This is science.
Now, these are not my most famous meatballs which I will share eventually. These meatballs are just quick and they’ll make your holiday a little less stressful. Worst case, stick this recipe in you back pocket for a cruise-control type of dinner next week.
Let’s talk about the details…
PREP TIME: 10 MINS || COOK TIME: 15 MIN || TOTAL TIME: 25 MIN
INGREDIENTS:
Ground Beef
Panko crumbs
Scallion whites (at least 2)
1 clove of garlic
Salt & Pepper
As Baldwin’s famous SNL skit would say…it’s time for my— actually, never mind. I’m sure there are kids present.
Turn on Oven to 425.
Dice up your scallion whites and garlic.
Sauté the garlic.
Get a good sized bowl and plop in the ground beef.
Dump all the diced scallions, sautéed garlic, and the panko crumbs on top. Mix up well. Salt and pepper to taste.
Pinch small portions of the mix and roll into little meatballs with the palms of your hands.
Place on a baking sheet.
Bake for 15min or until cooked through completely. (Sometimes I like to go 10min, flip them, and 10min again to get them really charred up. But I’m a wild dude. Your char/burn preference is up to you.)
Take out, toss with your favorite sauce or just east them as is!
And that’s it! While little Timmy’s dressed in his yearly bunny outfit, running around outside like a damn maniac looking for a plastic egg filled with a quarter, you’re making big time moves making these meatballs. Ha! And Timmy thinks today’s all about him. Let him have a meatball and send him hopping back outside while you finish the rest.
